This recipe was shared by my good friend Chef Delva. It is sure to delight vegans, vegetarians, and meat eaters alike. Packed with protein and taste this soup is a crowd pleaser. Enjoy!
3/4 lb (total) red and black bean mix
5 whole fresh cayenne peppers
5 whole green chiles
1 white onion (whole with ends cut off)
5 bay leaf
1 TBS cumin
1 TBS garlic powder
1 TBS sea salt
1/2 TSP liquid smoke
1 TBS Beef marinade ( preferably *SPADE L* brand as there is no animal product in this marinade and the flavor is just delicious )
1 TBS Worcestershire sauce ( VEGAN alternative made by Annie’s natural can be ordered here ) ** NOTE that regular Worcestershire sauce contains Anchovies so it is not vegetarian.
•Start by rinsing the bean mix thoroughly 2-3 times or as needed to remove any of natures bumps in the road , like pebbles
•Wash all produce well and cut stems and roots off
•Fill an 8 quart pot with salted water add onion, peppers, bay leaf, liquid smoke and Worcestershire sauce.
• Bring to a boil
• Add rinsed beans
•Lower heat to medium low
• Bring to a slow summer and add the dry ingredients
• Allow to simmer for 8-10 hours adding lightly salted water every 2 hours or as needed
