One of my favorite soups that is both tasy and nutritious is this creamy vegan broccoli and avocado soup.
The broccoli and cashews bring protein, while the avocado adds healthy fat and a creamy texture to this delicious and satisfying soup. Hello muscles and healthy hair, nails and skin!
2 cups chopped broccoli
2 cups vegetable broth
1/2 large avocado sliced (remove skin and core)
1 cup cashews (pre soak for at least 1 hr)
1 minced garlic clove and small amount of onion (to your taste).
**Avoid garlic and onion if you follow a Sattvic vegetarian diet. Skip steps 1-3 and blend everything together then heat before serving.
Garlic Powder, salt, pepper, and Italian seasoning to taste
1-2 tbsp of olive oil (enough to sauté the garlic, onion and broccoli).
1. Heat up the oil and sauté garlic and onion until they turn slightly golden do not burn. Add broccoli and sauté lightly.
2. Add broth, cashews, and spices stir and let it simmer for about 15 minutes.
3. Allow to cool
